Store in a sealed container (an old Walker’s tin is perfect of course) and keep in a cool, dry place. Shortbread will
keep well for weeks, but can be frozen.
How To Make It Delishier
Ingredients Only 3 Ingredients!
340 g (2 1/4 cups) all purpose flour
113 g (1/2 cup) sugar, and extra for sprinkling on top of baked biscuits
227 g good quality salted butter, (2 sticks) softened (you can use unsalted, which is the norm for baking, but add a good pinch of salt)
Instructions
Heat oven to 375º F (190 ºC)
Mix the 3 ingredients together by hand or mixer, to a stiff consistency, but don’t overwork the dough and stop when it comes together
Roll out into the shape of a pan or tin to (ideally) 3/4 inch thick. A common mistake is to make the dough too thin.
You can make fingers, rounds, use a shortbread cutter, etc. Any shape will do. For fingers, make sure they are wide enough for the tines of a fork.
Prick the pices with a fork about 3/4rs of the way through – this lets the air escape and makes the rising even.
Place it in the oven and bake for 25 to 30 minutes – watch carefully after 20 minutes as every oven is different and you can easily burn them.
Once done, let them all cool in the pan before moving them.
