This is by far the best meat loaf recipe we have found, then tweaked the flavors and balanced out the spices. It’s also GREAT as hamburgers!
In some European recipes, they add boiled eggs in the middle. That works great if you like eggs. We typically serve it with French fries, mashed potatoes, peppercorn gravy and a salad.
Don’t forget the gravy! Either a beautiful Peppercorn Gravy, or the Swiss Chalet gravy.
There won’t be any leftovers!
Note: Although you can omit this spice, it might be worth a look at our “Rachel’s Seasoning”. It’s versatile and magically balanced flavors for a host of meals.
How To Make It Delishier
Ingredients
Meatloaf & Hamburgers
- 1 lb pork
- 1 lb beef
- 2 slices of bread
- 1/2 cup of milk to soak the bread
- 2 ribs of celery diced into tiny pieces
- 1/3 green pepper diced into tiny pieces
- 2 garlic cloves – diced small
- 2 medium sized onions diced into tiny pieces
- 1 tsp dried parsley
- 2 tsp “Magic Meat & Rice Spice Mix” (optional but strongly recommended)
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp smoked paprika
- 2 tbsp Worchester sauce
- 2 eggs – lightly whipped with a fork
Glaze – Optional
- 1 1/2 C ketchup
- 1 tsp dry mustard
- 1/4 C brown sugar
- 1/2 tsp Worchester sauce
- Pinch of paprika
Instructions
- In a skillet, sauté the vegetables in a little butter or oil – celery, green pepper, garlic and onion.
- In the meantime, soak the 2 slices of bread in the milk. You can pinch the bread into a few pieces if you like.
- Then add the rest of the ingredients to the mix – parsley, Magic Meat & Rice Spice Mix, salt, pepper, smoked paprika, Worcester sauce, and the 2 eggs. Mix for a couple of minutes and remove from the heat.
- Add the bread and the milk to the mixture.
- Combine the meat and the entire mixture in a large bowl. Don’t overwork the meat. Just mix it enough to ensure that there’s even coverage in the mix.
- Turn on your over at 350 ℉.
- On a cutting board or counter, form the loaf. Transfer it to a baking sheet lied with tin foil. There’ll be a lot of juices coming out so the foil is a good idea.
- After the oven is at full temperature, pop in the loaf and set the timer for 1 hour.
- If you’re inclined to glaze your meatloaf, then prepare the glaze by mixing all the ingredients together, ready to brush on.
- After an hour, check the internal temperature of your loaf. It should be at least 160 ℉. It probably won’t be yet unless your oven runs hot.
- If you’re glazing… then this is the time!
- At this time, you can turn up the temperature to 375 ℉ and set the times for 15 minutes.
